Baked lentils with cheese

Ingredients:
2 carrots, peeled and grated
1 yellow onion, finely chopped
2 cloves of garlic, finely chopped
200 g (1 cup) of raw red lentils
2 1/4 cups of hot vegetable broth
100 g (1/2 cup) of grated cheddar cheese
2 slices of bread, coarsely grated
Extra virgin olive oil
Salt and pepper to taste
Steps:
1 Peel and grate the carrots, chop the onion and garlic, set aside.
2 In a large non-stick skillet, add a splash of olive oil and heat it up. Once hot, add the carrot and onion, stir, and cook over medium heat for 5 minutes. Add the chopped garlic for the last minute.
3 Add the lentils, mix and add a little hot broth, let it boil and continue adding the broth gradually, adding more when the broth in the pan has been absorbed, stirring regularly so it doesn’t stick. The lentils will take about 15 to 20 minutes to cook and absorb the broth. You will notice that the lentils are soft and have almost doubled in quantity.
4 Preheat the oven to 180 C and prepare a round baking pan, or any shape you like, lined with parchment paper.
5 Add the cheese and the breadcrumbs, season with salt and pepper, and stir until the cheese melts and the breadcrumbs are no longer visible.
6 Place the mixture in the mold and press down gently to make it even, sprinkle extra grated cheese on top, and bake for 30 minutes.
7 Let it cool and harden a bit before lifting the parchment paper from the mold, then cut it, enjoy, and be happy.
