If you are looking for a different and delicious option, carbonara chickpeas might surprise you. The crunchy texture of the mushrooms and the creaminess of the sauce make every bite a delight.

Ingredients:

400 g of cooked chickpeas

150 g of bacon strips

200 ml of cooking cream

100 ml of coconut milk

2 garlic cloves1 onion

250 g of mushrooms

50 g of grated Parmesan or Manchego cheese

Salt and pepper to taste

Extra virgin olive oil

Steps

Step 1

In a pan with hot oil, add the crushed garlic and chopped onion. Add a pinch of salt to help sweat the onion without burning it. When it is tender, incorporate the bacon and black pepper. Stir until the bacon is golden.

Step 2

Add the cooked chickpeas and stir so that they absorb the flavor of the bacon. Then, add a bit of cooking water to deglaze. Add the cream and coconut milk, mixing well until you obtain a creamy sauce.

Step 3

Slice the mushrooms and add a pinch of salt before incorporating them. Cook for a few minutes until they are tender, but still maintaining their texture. Turn off the heat and sprinkle grated cheese, stirring until it melts with the heat.

Step 4

Plate the chickpeas and add a bit more grated cheese and pepper. For an extra flavor, you can grate truffle on top. Enjoy this easy, creamy dish full of nuances.
